Woke up to a beautiful morning camping at Lake Eufaula. Pictures coming soon. I am so lucky to live in the deep south away from the cold weather. Posted Image

We would like to thank the south for pumping up the warm air on Friday. We made it into the upper 60s. today, 40s tops. Glad all is well Leon.

OK, where are the pics, Leon? How do we know you are really there? I got sunburned while working in the yard today. It was close to 80 degrees!

Doing anything in a DO? I've made a Jalopeno corn bread twice and can't get it quite right. It was pretty good the last time, but I have some more tweaking to do!

They are coming, I promise. I have been way to busy relaxing and not had time to take any right now. Maybe tomorrow, who knows. I am having to much fun just being here. Trying out new things. : )

Sooo, since I'm dying for another topic from Leroy's camping and we're not haha. What happened to your cornbread Joe? That is the one thing that I can sorta do in the DO. except when we get it too hot and burn the bottom.

Hey Carmen, maybe Leon won't mind us derailing his thread too much! :smiley-signs080: My first attempt at cornbread was in my only DO, which is a 12 inch 8 quart and too deep for bread. I found this out when I couldn't get the top to brown and I let it cook nearly an additional 15 minutes. Of course the bottom burned! The other issue is that it didn't have enough kick to it. The recipe uses grated jalapeno pepper jack cheeze. So, I bought a 12 inch, 6 quart DO and tried again. This time, I chopped up a jalapeno pepper to add to the mix. The recipe calls for 10 coals on bottom and 14 coals on top and after about 20 minutes, I could tell the bottom was cooking faster than the top. I removed the coals from the bottom and dumped tham all on top! This time, the cornbread cooked pretty evenly. However, still no kick. When I chopped the pepper, I removed the seeds. Should I have left them?

Joe was that Jalepeno in the singular? If you make pones of cornbread in the DO the size that Carmen does then you may need at least 3 peppers for flavor and heat. Jalapeno's heat content varies by time of year and growing conditions. I usually taste a small piece to judge how much to use in a dish.

I am at Hardridge Creek COE, at the south end of the lake, site #74 in the Shady Loop, full hookup.

Hey Billy, it was singular. It was a good size, about 3 inches long. I did taste a piece and it was not hot at all. My DO is a 12 inch 6 quart.

What are yall doing, trying to change the subject? Ok ok ok, I will take a few pictures tomorrow. I have been busy working on the camper. It has been perfect here so far and it looks like it is going to be great the next few days. Loving it.
